Ingredients:


1 cup shredded carrots, 

1 cup thinly sliced cucumber, 

1 cup thinly sliced red cabbage, 

1/2 cup sliced almonds, 

1/4 cup chopped fresh cilantro (optional),

- 2 tablespoons apple juice vinegar
