Bramboráky, also known as Czech potato pancakes, is a delicious and popular traditional dish in Czech cuisine. They are made from grated potatoes, flour, eggs, and various seasonings. Here's a simple recipe for making bramboráky:


Ingredients:


- 4 large potatoes

- 1 small onion, finely chopped

- 2 eggs

- 4 tablespoons all-purpose flour

- 1 teaspoon salt

- 1/2 teaspoon ground black pepper

- Vegetable oil, for frying


Instructions:


1. Peel the potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.


2. In a large bowl, combine the grated potatoes, chopped onion, eggs, flour, salt, and pepper. Mix well until all the ingredients are evenly combined.


3. Heat a generous amount of vegetable oil in a large skillet or frying pan over medium-high heat.


4. Take a handful of the potato mixture and shape it into a flat pancake, about 1/4 to 1/2 inch thick. Carefully place the pancake in the hot oil, and repeat to make more pancakes, leaving enough space between them in the pan.


5. Fry the bramboráky for about 3-4 minutes on each side, or until they turn golden brown and crispy. You may need to adjust the heat to prevent burning.


6. Once cooked, transfer the bramboráky to a plate lined with paper towels to drain excess oil. Repeat the frying process with the remaining potato mixture until all the pancakes are cooked.


7. Serve the bramboráky hot with a dollop of sour cream or applesauce on top, or enjoy them on their own as a side dish.
