Kulajda is a traditional Czech soup made with mushrooms, potatoes, dill, vinegar, and cream. It has a tangy and creamy flavor that is popular in Czech cuisine. Here's a basic recipe for Kulajda:
Ingredients:
- 500g fresh mushrooms, sliced
- 2 large potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1-liter vegetable or mushroom broth
- 2 tablespoons vinegar (traditionally, Czechs use white wine vinegar or apple cider vinegar)
- 200ml heavy cream
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
- A handful of fresh dill, chopped
- Salt and pepper to taste
Instructions:
1. In a large pot, melt the butter over medium heat. Add the onions and garlic, and sauté until translucent and fragrant.
2. Add the sliced mushrooms to the pot and cook until they release moisture and brown. Stir occasionally to prevent sticking.
3. Sprinkle the flour over the mushrooms and stir well to coat them. Cook for another minute to cook off the raw flour taste.
4. Pour in the vegetable or mushroom broth and add the diced potatoes. Bring the soup to a boil, then reduce the heat to low and simmer until the potatoes are tender. This should take about 15-20 minutes.
5. stir in the vinegar and heavy cream once the potatoes are cooked. Season with salt and pepper to taste. Simmer for an additional 5 minutes to let the flavors meld together.
6. Remove the pot from the heat and stir in the chopped dill.
7. Serve the Kulajda soup hot. If desired, you can garnish it with additional dill and a dollop of sour cream.
