Ingredients:


- 4 corn tortillas

- 4 large eggs

- 1 cup of refried beans

- 1 cup of salsa (homemade or store-bought)

Instructions:


1. Warm the tortillas: Heat a large skillet over medium heat and add a small amount of cooking oil. Place one tortilla at a time in the skillet and heat for about 30 seconds on each side, until softened. Repeat with the remaining tortillas and set them aside.


2. Prepare the beans: In a small saucepan, heat the refried beans over medium-low heat until warm. Stir occasionally to prevent sticking. You can also add a little water or broth if the beans are too thick. Once warmed, remove from heat and set aside.


3. Make the salsa: If you're using homemade salsa, prepare it in advance. Otherwise, you can use your preferred store-bought salsa.


4. Fry the eggs: In the same skillet you used for the tortillas, add a little more oil if needed. Crack the eggs into the skillet, making sure to space them apart. Season with salt and pepper to taste. Cook the eggs until the whites are set and the yolks are still slightly runny, or to your desired doneness.


5. Assemble the Huevos Rancheros: Place a tortilla on a plate. Spread a generous spoonful of refried beans on top. Add a fried egg to the beans and spoon some salsa over the egg. Sprinkle shredded cheese on top. Repeat the process for the remaining tortillas and eggs.


6. Garnish and serve: Sprinkle chopped cilantro over the assembled Huevos Rancheros. Add avocado slices if desired. Serve immediately while still warm.
