Ingredients:
- 1 pound ground beef (or you can use ground turkey, chicken, or vegetarian meat substitute)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) tomato sauce
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/2 teaspoon cayenne pepper (adjust according to your spice preference)
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions, chopped cilantro
Instructions:
1. Heat a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned. If using lean meat, you may need to add a small amount of oil to prevent sticking.
2. Add the chopped onion, garlic, and bell pepper to the pot. Sauté until the vegetables are softened, about 5 minutes.
3. Add the diced tomatoes, tomato sauce, kidney beans, black beans, corn, chili powder, cumin, paprika, oregano, and cayenne pepper to the pot. Stir well to combine all the ingredients.
4. Bring the chili to a simmer. Reduce the heat to low and cover the pot. Let it simmer for about 30 minutes, stirring occasionally.
5. Taste the chili and season with salt and pepper according to your preference. You can add more chili powder or cayenne pepper if you like it spicier.
6. Continue to simmer the chili for another 15 to 30 minutes to allow the flavors to meld together. The longer it simmers, the more the flavors will develop.
7. Serve the chili hot in bowls. Top with your favorite garnishes such as shredded cheese, sour cream, chopped green onions, or chopped cilantro.
