Homemade tater tots:


Ingredients:


- 4 large russet potatoes

- 1 teaspoon salt

- 1/2 teaspoon garlic powder

- 1/2 teaspoon onion powder

- 1/4 teaspoon paprika

- 1/4 teaspoon black pepper

- 1/4 cup all-purpose flour

- Vegetable oil, for frying


Instructions:


1. Wash the potatoes thoroughly and peel them. Then, grate the potatoes using a box grater or a food processor with a grating attachment.


2. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial to ensure your tater tots turn out crispy.


3. Transfer the grated and squeezed potatoes to a large bowl. Add salt, garlic powder, onion powder, paprika, black pepper, and flour. Mix well until all the ingredients are evenly incorporated.


4. Take a small handful of the potato mixture and shape it into a small cylinder, about 1 inch long. Repeat with the remaining mixture until you've formed all your tater tots.


5. Heat vegetable oil in a deep skillet or pot over medium-high heat. The oil should be about 2 inches deep.


6. Carefully add the tater tots to the hot oil, a few at a time, making sure not to overcrowd the pan. Fry them for about 3-4 minutes or until golden brown and crispy, turning them occasionally for even cooking.


7. Using a slotted spoon or tongs, transfer the fried tater tots to a plate lined with paper towels to drain excess oil.


8. Repeat the frying process with the remaining tater tots until they are all cooked.


9. Serve the tater tots hot as a side dish or snack. They go well with ketchup, aioli, or your favorite dipping sauce.
