Ingredients:


4 large eggs, 

1 tablespoon each of soy sauce and 

 mirin, and 

1 teaspoon each of sugar and

 vegetable oil for cooking


1. Whisk together the sugar, mirin, soy sauce, and eggs in a bowl until well combined.

2. Over medium heat, heat a rectangular tamagoyaki pan or a nonstick frying pan. Oil the pan lightly.

3. Tilt the pan to ensure that the egg mixture covers the entire bottom, then pour a thin layer of it into the pan.

4. Using a spatula or chopsticks, begin rolling the bottom layer from one end of the pan to the other once it has set but is still slightly runny on top.

5. Oil the space after moving the rolled omelet to one end of the pan.

6. Make sure the egg mixture flows under the rolled omelet as you pour another thin layer into the pan to cover the exposed surface.

7. Roll the new layer tightly toward the rolled omelet when it has set but is still slightly runny on top.

8. Add more layers in the order listed in steps 5-7 until the egg mixture is used up.

9. Cook the tamagoyaki for a minute or two after it has been fully rolled to ensure that it is cooked through.

10. The rolled omelet should cool slightly before being transferred to a cutting board.

11. Serve the tamagoyaki by slicing it into bite-sized pieces.


Tamagoyaki can be consumed at room temperature or warm. To enhance the flavor, it is frequently topped with a dollop of soy sauce or some thinly sliced green onions. It's a dish that can be enjoyed on its own or in sushi rolls or bento boxes as a filling.
