Recipe for sweet jelly:
Ingredients:
- 2 cups fruit juice (you can use any fruit juice of your choice)
- 2 tablespoons lemon juice
- 2 cups granulated sugar
- 1 package (about 2 1/2 tablespoons) of powdered pectin
Instructions:
1- Prepare your canning jars by washing them in hot, soapy water and sterilizing them in boiling water or running them through a dishwasher cycle.
2- In a large saucepan, combine the fruit juice, lemon juice, and powdered pectin. Stir well to combine.
3- Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring constantly.
4- Gradually add the granulated sugar to the boiling mixture, stirring continuously until the sugar is completely dissolved.
5- Continue to boil the mixture for about 1 minute, stirring constantly.
6- Remove the saucepan from heat and skim off any foam that may have formed on the surface.
7- Carefully ladle the hot jelly mixture into the prepared canning jars, leaving about 1/4 inch of headspace at the top.
8- Wipe the rims of the jars with a clean, damp cloth to remove any spills or drips.
9- Place the lids and rings on the jars and tighten them.
10- Process the jars in a boiling water bath for about 10 minutes to ensure proper sealing.
11- Remove the jars from the water bath and let them cool on a wire rack. As they cool, you should hear a "ping" sound, indicating that the jars are properly sealed.
12- Once the jars have cooled completely, check the seals by pressing down on the center of each lid. If the lid doesn't move or make a popping sound, it is sealed properly. If any jars haven't been sealed, refrigerate and consume those jars first.
13- Store the sealed jars in a cool, dark place for up to a year. Once opened, refrigerate the jelly and consume it within a few weeks.
