Recipe for chicken rice:
Ingredients:
- 1 whole chicken (approximately 3-4 pounds)
- 2 cups jasmine rice
- 4 cups chicken broth
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 thumb-sized piece of ginger, grated
- 1 onion, finely chopped
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Optional garnishes: chopped cilantro, sliced cucumber, chili sauce
Instructions:
1. Prepare the chicken: Remove any giblets from the chicken cavity and rinse the chicken inside and out. Pat it dry with paper towels. Sprinkle salt and pepper all over the chicken, both inside and out.
2. Cook the chicken: Place the chicken in a large pot and add enough water to cover it. Bring the water to a boil and then reduce the heat to low. Simmer the chicken for about 45-60 minutes until it is cooked through and the juices run clear. Remove the chicken from the pot and set it aside to cool. Once cooled, chop the chicken into serving pieces.
3. Prepare the rice: In a separate pot, heat the vegetable oil over medium heat. Add the minced garlic, grated ginger, and chopped onion. Sauté until fragrant and the onion is translucent. Add the jasmine rice to the pot and stir to coat it with the oil and aromatics. Cook for a couple of minutes until the rice grains start to turn slightly golden.
4. Cook the rice: Pour the chicken broth into the pot with the rice. Add the soy sauce and season with salt and pepper to taste. Stir everything together. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid. Allow the rice to simmer for about 15-20 minutes, or until all the liquid is absorbed and the rice is cooked.
5. Serve: Fluff the cooked rice with a fork. Arrange the chopped chicken pieces on top of the rice. Garnish with chopped cilantro, sliced cucumber, and chili sauce if desired. Serve hot and enjoy.
